Spinach Casserole

  • 2 (10 oz. size) boxes frozen spinach
  • 1 1/2 c. saltine cracker crumbs
  • 2 c. milk
  • 2 eggs, separated
  • 1/2 c. butter, melted
  • 1 small onion, minced
  • 1/8 tsp. garlic powder or 1 clove garlic
  • salt and pepper

Directions

    Mix egg yolks with milk.

    Add cooked and drained spinach, cracker crumbs, onion, garlic salt, pepper and half of the butter. Beat egg whites until stiff.

    Slowly fold into spinach mixture. Place rest of butter in 2-quart casserole dish.

    Add spinach mixture.

    Cook in the oven in a pan of water at 350° for 45 minutes.

    Serves 8.
