  • 3 pkg. (10 oz.) frozen spinach
  • 3 eggs, beaten
  • 1/2 lb. Mozzarella cheese
  • 1 lb. cottage cheese
  • 2 tsp. butter
  • 2 tsp. flour
  • 1/2 c. spinach juice

Directions

    Drain spinach thoroughly, reserving 1/2 cup of the juice. Make thickening of butter, flour and juice by putting in small saucepan and bringing it to a slow boil. Remove thickening from heat and let it cool and mix with all the remaining ingredients. Bake at 450° for 45 minutes, uncovered, in a 13 x 9 pan. Serves 6 to 8.
