  • 2 boxes frozen spinach
  • 1/4 c. chopped onion (fine)
  • dash of salt
  • 1 egg, beaten
  • 1/4 c. milk
  • 1/2 c. shredded American cheese, Monterey Jack or combination of the two
  • 1/2 pkg. crushed saltines
  • 1/2 stick butter or margarine
  • 1 small can mushrooms

Directions

    Defrost and prepare spinach.

    Drain.

    Add remaining ingredients.

    Reserve a few crushed saltines.

    Pour mixture into baking dish or casserole dish.

    Bake at 350° for 45 minutes.
