Spinach Casserole

- 2 lbs frozen spinach
- 2 eggs
- 1 tablespoon water
- 1 teaspoon olive oil
- 1 small onion, chopped
- salt and pepper
- 3 tablespoons feta cheese
Directions

1Thaw and drain spinach.

2Beat eggs with 1 tbsp water.

3Sautee onion in olive oil until goldens and let cool a bit.

4Mix spinach, egg mixture, onion and salt and pepper to taste, place in lightly greased casserole dish.

5Top with feta cheese.

6Bake at 350 for about 40 minutes.

7Serve at room temperature.
