Spinach Casserole

Ingredients

  • 2 lbs frozen spinach
  • 2 eggs
  • 1 tablespoon water
  • 1 teaspoon olive oil
  • 1 small onion, chopped
  • salt and pepper
  • 3 tablespoons feta cheese

Directions

    Thaw and drain spinach.

    Beat eggs with 1 tbsp water.

    Sautee onion in olive oil until goldens and let cool a bit.

    Mix spinach, egg mixture, onion and salt and pepper to taste, place in lightly greased casserole dish.

    Top with feta cheese.

    Bake at 350 for about 40 minutes.

    Serve at room temperature.
