Spinach Casserole

  • 8 ounces spinach, bag frozen
  • 1 tablespoon water
  • 1 teaspoon dried chives
  • 12 cup dry rice
  • 1 cup cheddar cheese, shredded
  • 13 cup milk
  • 2 eggs, beaten
  • 1 pinch salt
  • 1 pinch Mrs. Dash table blend seasoning

Directions

    Boil 1/2 c dry rice with 1 tsp butter and 1 1/2 Celsius water.

    Simmer 15 minutes until done and water is gone.

    Cook spinach with a few tablespoons water in microwave 3-5 minutes until wilted.

    Mix together milk, eggs, seasoning, rice, chives, and cheese in an 8 inches round or square glass casserole dish thats greased.

    Mix in spinach.

    Bake at 350 degrees 40-45 minutes.

    Let cool on a towel on the counter for about ten minutes before serving so its easier to cut in slices.
