Spinach Cheese Pie

- 1 (10 oz.) pkg. frozen spinach
- 3 Tbsp. margarine
- 1 Tbsp. flour
- 1/2 c. heavy cream
- 1 c. grated Mozzarella or Monterey Jack cheese
- salt and pepper to taste
- 1 (9-inch) pie shell, baked
Directions

1Cook spinach as directed on package and drain.

2In saucepan, melt margarine over medium heat and gradually stir in flour.

3When thickened, stir in cream.

4Add 1/2 cup of cheese and stir until melted.

5Fold in spinach, salt and pepper.

6Pour mixture into baked pie shell.

7Sprinkle top of pie with remaining cheese.

8Bake at 350° for 10 to 15 minutes.

9Serves 8.
