  • 2 (10 oz.) pkg. frozen chopped spinach, thawed
  • 4 egg whites
  • 1 c. nonfat yogurt cheese
  • 1 clove garlic, minced
  • 3/4 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 c. reduced fat shredded Monterey Jack cheese
  • 1 (8 oz.) can sliced water chestnuts, drained

    Preheat oven to 350°.

    Coat a 9 x 13-inch dish with cooking spray.

    Drain spinach, squeeze liquid out.

    In bowl, combine egg whites, yogurt cheese and garlic.

    Whisk until smooth.

    Add flour, baking powder and salt.

    Mix well.

    Blend in cheese and spinach. Add chestnuts.
