- 1 medium leek
- water
- 1/4 c. butter or margarine
- 2 c. chopped, cooked chicken
- 1/2 (10 oz.) pkg. frozen, chopped spinach or broccoli, cooked and drained
- 1 (10-inch) pie crust
- 1 Tbsp. flour
- 1 1/2 c. shredded Swiss cheese
- 4 eggs
- 1 1/2 c. half and half or evaporated milk
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground nutmeg
Directions

1Cut leek in half lengthwise, wash and trim, leaving green tops intact.

2Cut crosswise into thin slices.

3Place leek in small saucepan.

4Add enough water to cover.

5Cook until boiling; reduce heat.

6Simmer 5 minutes.
