  • 1 box Jiffy cornbread mix
  • 1 onion, chopped
  • 1 box chopped spinach, thawed
  • 3/4 c. cottage cheese
  • 1 stick margarine, melted
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/3 c. buttermilk
