Spinach Crab Soup

Ingredients
- 6 Tbsp. butter
- 4 c. fresh spinach, washed and chopped
- 6 green onions, chopped
- 2 Tbsp. flour
- 1 c. whipping cream
- 3 c. milk
- 1/4 c. white wine
- 2 oz. diced pimentos, drained
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. grated Parmesan cheese
- 1 lb. crab meat or imitation crab meat
Directions

1Melt butter in pan.

2Add spinach and onions.

3Saute, stirring, until vegetables are soft.

4Stir in flour and mix well.

5Slowly add cream and milk, stirring constantly.

6Stir in pimentos, wine, salt and pepper.

7Cover and simmer gently for 20 minutes.

8Stir in cheese and crab meat.

9Cover and simmer gently for 5 minutes. Stir once or twice.

10Serves 6 to 8.
