  • 4 bunches spinach leaves, chopped and cooked in
  • 2 tsp. butter
  • 3 potatoes, boiled and mashed
  • 1/4 tsp. nutmeg
  • 1 tbsp. corn flour
  • 1 tbsp. bread crumbs
  • 2 eggs, beaten
  • Oil, as needed
  • Salt and pepper, to taste

Directions

    Combine the mashed potato with nutmeg, salt and pepper.

    Cook on a low flame; stir in egg and mix well.

    Add the spinach leaves.

    Shape the mixture into croquettes.

    Roll them in corn flour, dip in the other egg, roll in bread crumbs and fry.

    Serve hot.
