- 4 bunches spinach leaves, chopped and cooked in
- 2 tsp. butter
- 3 potatoes, boiled and mashed
- 1/4 tsp. nutmeg
- 1 tbsp. corn flour
- 1 tbsp. bread crumbs
- 2 eggs, beaten
- Oil, as needed
- Salt and pepper, to taste
Directions

1Combine the mashed potato with nutmeg, salt and pepper.

2Cook on a low flame; stir in egg and mix well.

3Add the spinach leaves.

4Shape the mixture into croquettes.

5Roll them in corn flour, dip in the other egg, roll in bread crumbs and fry.

6Serve hot.
