Spinach Dip

  • 2 to 3 jalapenos
  • 1 medium onion, chopped
  • 1 (4 oz.) can chopped green chilies
  • 2 medium tomatoes, peeled and seeded
  • 1 (10 oz.) pkg. spinach, thawed
  • 2 1/2 c. Monterey Jack, grated
  • 1 (8 oz.) pkg. cream cheese
  • 1 c. half and half
  • 1 1/2 Tbsp. red wine vinegar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. vegetable oil
  • cayenne pepper to taste

Directions

    Deseed and chop jalapenos; deseed tomatoes.

    Saute jalapenos and onion in oil in large skillet until onion is soft.

    Add green chilies and tomatoes; cook 2 minutes.

    Add cream cheese until melted; remove from heat.

    Press spinach between layer of paper towels until dry.

    Add spinach, Monterey Jack, half and half, cayenne pepper, salt and pepper.

    Stir well; put in baking dish and sprinkle with paprika.

    Bake at 400° for 20 to 25 minutes. Serve warm with Tostitos.
