  • 1 cup cooked spinach
  • 1/2 onion
  • 2 tbsp parsley
  • 3 potatoes
  • 1 pinch salt
  • 1 pinch pepper
  • 2 tbsp olive oil

    Chop potatoes into small cubes.

    In a bowl, stir the eggs, salt, pepper, sliced onion, and sliced parsley.

    Heat a frying pan, then add the olive oil

    Add the mix of eggs and spread all over the Frying pan.

    Add the spinach over eggs.

    Let it cook until it releases from the pan

    Season the potatoes with parsley and salt, and serve with the spinahs eggs.
