Spinach Frittata

- 6 eggs
- 1 pkg. frozen spinach, cooked and well drained
- 1 (8 oz.) pkg. Mozzarella, shredded
- grated cheese to taste
- 1 pkg. Ricotta (optional)
Directions

1Put a little oil in a flat pan and wait until it's hot.

2Mix the eggs and pour them in the flat pan.

3Add the cooked spinach and mix with the egg.

4Then add shredded Mozzarella (and Ricotta). Wait until the bottom is all dried up.

5Put a flat dish over the pan and turn it over so the frittata is on the dish and slide it back in the pan.

6Cook the other side, your omelet (frittata) should be light brown on the edges.
