Spinach Lasagna

Ingredients

  • 1 whole garlic bud, chopped (at least 8 to 10 cloves)
  • 2 lb. ground beef
  • oregano to taste
  • 1 large can tomato sauce (32 oz.)
  • 32 oz. cottage cheese (1 to 1 1/2 lb. carton, one 8 oz. carton)
  • 3 eggs
  • 6 to 9 lasagna noodles (large)
  • 1 1/2 c. Parmesan cheese
  • 1 (10 oz.) frozen chopped spinach
  • 1/2 onion, chopped fine
  • 1 (8 oz.) shredded Mozzarella cheese or 3 (6 oz.) pkg. sliced

Directions

    Brown hamburger, garlic, onion and oregano.

    Drain and add tomato sauce.

    Allow to simmer 15 to 20 minutes.

    Cook lasagna noodles (with oil to prevent sticking) and allow to soak in cold water.

    Cook spinach and drain.
