Ingredients

  • 1 pound Navy Beans, Soaked And Drained
  • 3 cups Water
  • 1 cup Tomato Juice
  • 1 cup Brown Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Dry Mustard
  • 1/2 Tablespoons Mustard
  • Maple Flavoring (opt.)
  • 1 Small Onion, Chopped
  • 1/2 pieces Bacon, Chopped

Directions

    Combine everything in a pressure cooker.

    (Mine is a 6 qt.

    although I think it would work in a 4 qt.)

    Bring to a boil, stirring occasionally.

    Lock lid and put weight in place.

    Bring up to pressure (weight rocks gently).

    Cook for 30 minutes.

    Allow to depressurize naturally or use the quick method.

    Beans will appear too juicy at first, but by the next day, they will have absorbed most of the juice.
