Spinach Lasagna

  • 1/2 (16 oz.) pkg. lasagna (9 noodles)
  • 1 large onion, chopped
  • 1 (8 oz.) pkg. mushrooms
  • garlic
  • 2 pkg. frozen spinach, thawed
  • 1 tsp. basil
  • 1 (16 oz.) container cottage cheese (low-fat)
  • 2 egg whites
  • 1 (8 oz.) container fat-reduced Mozzarella cheese
  • 3 (8 oz.) cans tomato sauce

Directions

    Cook noodles and drain.

    Cook onion, mushrooms and garlic 5 minutes; remove from heat.

    Stir in spinach, oregano and basil. Blend cottage cheese, egg whites and shredded Mozzarella cheese. Layer noodles, spinach, cheese and tomato sauce.

    Bake at 375° in a 13 x 9-inch pan for 45 minutes.
