  • 1 (15 oz.) can tomato sauce
  • 1 medium diced onion
  • 1/4 tsp. basil
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano
  • 1 c. Ricotta cheese (or small curd cottage cheese)
  • 6 oz. shredded Mozzarella cheese
  • 1 tsp. parsley flakes
  • 2 (10 oz.) pkg. frozen, chopped spinach, cooked and drained well
  • 1 large tomato, sliced
  • 2 oz. grated Parmesan cheese
  • 4 oz. uncooked lasagna noodles

Directions

    Combine first 5 ingredients in bowl.

    Mix next 3 ingredients in another bowl; set aside.

    Place cooked spinach in bottom of an 8 x 10-inch pan.

    Spread cheese mixture over spinach.

    Layer uncooked noodles.

    Pour tomato mixture over noodles.

    Top with sliced tomatoes.

    Sprinkle with Parmesan cheese.
