Spinach Lasagna

  • 1 lb. Ricotta or small-curd cottage cheese
  • 1 egg
  • 1 tsp. salt
  • 3/4 tsp. oregano
  • 2 (15 1/2 oz.) jars spaghetti sauce or equivalent of your own
  • 1 1/2 c. shredded Mozzarella cheese, divided
  • 1 (10 oz.) pkg. frozen spinach, thawed and drained
  • 1/8 tsp. pepper
  • 1/2 pkg. lasagna noodles (8 oz.)
  • 1 c. water

Directions

    In a large bowl, mix Ricotta or cottage cheese, 1 cup of the Mozzarella cheese, egg, spinach, salt, oregano and pepper.

    In greased 13 x 9 x 2-inch baking dish, layer 1/2 cup sauce, 1/3 of the noodles and half the cheese mixture.

    Repeat layers.

    Top with remaining noodles and cover with remaining sauce.

    Sprinkle with remaining Mozzarella cheese.

    Pour the water AROUND the EDGES. Cover tightly with foil.

    Bake in 350° oven for 1 hour and 15 minutes or until bubbly.

    Let stand 5 minutes before serving.
