Spinach Lasagna

- 1 lb. Ricotta or small-curd cottage cheese
- 1 egg
- 1 tsp. salt
- 3/4 tsp. oregano
- 2 (15 1/2 oz.) jars spaghetti sauce or equivalent of your own
- 1 1/2 c. shredded Mozzarella cheese, divided
- 1 (10 oz.) pkg. frozen spinach, thawed and drained
- 1/8 tsp. pepper
- 1/2 pkg. lasagna noodles (8 oz.)
- 1 c. water
Directions

1In a large bowl, mix Ricotta or cottage cheese, 1 cup of the Mozzarella cheese, egg, spinach, salt, oregano and pepper.

2In greased 13 x 9 x 2-inch baking dish, layer 1/2 cup sauce, 1/3 of the noodles and half the cheese mixture.

3Repeat layers.

4Top with remaining noodles and cover with remaining sauce.

5Sprinkle with remaining Mozzarella cheese.

6Pour the water AROUND the EDGES. Cover tightly with foil.

7Bake in 350° oven for 1 hour and 15 minutes or until bubbly.

8Let stand 5 minutes before serving.
