Spinach Lasagna

Ingredients

  • 1 lb. Ricotta or small curd cottage cheese
  • 1 1/2 c. Mozzarella cheese, shredded (reserve 1/2 c.)
  • 1 pkg. chopped spinach, thawed and drained
  • 1 egg
  • 1 tsp. salt
  • 3/4 tsp. oregano
  • 1/8 tsp. black pepper
  • 2 (15 1/2 oz.) jars spaghetti sauce
  • 1/2 lb. lasagna noodles
  • 1 c. water

Directions

    Mix cheese, spinach, egg and seasonings.

    Grease a 13 x 9 pan. Layer 1/2 cup of sauce, 1/3 of noodles and half of cheese mixture. Repeat.

    Top with remaining sauce.

    Sprinkle with 1/2 cup Mozzarella cheese.

    Pour water around edge.

    Cover tightly.

    Bake for 1 hour and 15 minutes at 350°.

    Let stand 15 minutes before serving.
