Spinach Lasagna

  • 8 oz. shredded Cheddar cheese
  • 8 oz. Mozzarella cheese
  • 4 oz. Parmesan cheese
  • 8 oz. Ricotta cheese
  • 3 eggs
  • 4 tsp. chopped basil
  • 1 pkg. lasagna pasta
  • 3 pkg. spinach
  • 1 can sliced mushrooms
  • 2 chopped tomatoes
  • 2 small cans tomato sauce
  • small clove garlic
  • salt and pepper to taste

Directions

    Mix spinach, mushrooms, tomatoes, tomato sauce, garlic, salt and pepper together.

    Cook lasagna noodles per package instructions.

    Drain and lay on waxed paper.

    Mix together cheeses, eggs and basil.

    Put thin layer of sauce in bottom of pan.

    Layer lasagna noodles.

    Top with spinach and cheese mixture. Keep layering and end layering with lasagna noodles.

    Top with shredded Mozzarella cheese.

    Bake at 350° for 30 minutes.
