Spinach Lasagna

  • 1 1/4 oz. McCormick spaghetti sauce mix
  • 6 oz. tomato paste
  • 8 oz. tomato sauce
  • 1 3/4 c. water
  • 2 eggs, beaten
  • 16 oz. Ricotta cheese
  • 10 oz. frozen spinach, thawed and drained
  • 1/2 c. Parmesan cheese
  • 9 uncooked lasagna noodles
  • 1 (8 oz.) pkg. shredded Mozzarella cheese

Directions

    Combine spaghetti sauce mix, tomato paste, tomato sauce and water in a medium saucepan.

    Bring to a boil over low heat. Remove from heat.

    Combine eggs, Ricotta cheese, spinach and 1/4 cup Parmesan cheese; set aside.

    Spread 1/2 cup tomato sauce in a greased 13 x 9 x 2-inch baking dish.

    Alternate layers of lasagna noodles, Ricotta cheese mixture, Mozzarella cheese and tomato sauce.

    Sprinkle with remaining Parmesan cheese.

    Cover with foil; bake at 350° for 1 hour.

    Let stand 10 minutes before serving.
