Spinach Lasagna

  • 1 lb. small curd cottage cheese
  • 3 c. shredded Mozzarella cheese
  • 2 eggs
  • 4 (10 oz.) pkg. frozen spinach, thawed and drained
  • 1 tsp. salt
  • 1 1/2 tsp. oregano
  • 1/2 tsp. pepper
  • 2 jars spaghetti sauce
  • 1 box lasagna noodles (uncooked)
  • 1 c. water

Directions

    Mix cottage cheese and Mozzarella cheese (reserve 1 cup for topping), eggs, spinach, oregano, salt and pepper in a large bowl. In greased 13 x 9-inch pan, layer 1/2 cup sauce, 1/3 noodles and 1/2 of cheese mixture.

    Repeat, then top with remaining noodles. Add remaining sauce.

    Top with reserved Mozzarella cheese.

    Pour water around edge of pan.

    Cover with foil tightly.

    Bake at 350° for 1 to 1 1/2 hours until bubbly.

    Let stand before serving.
