Spinach Lasagna

  • 1 jar spaghetti sauce
  • lasagna noodles (6 to 8), cooked and drained
  • 2 beaten eggs
  • 1 tsp. basil
  • 1/2 tsp. red pepper flakes
  • 4 oz. shredded Cheddar cheese
  • 4 oz. Mozzarella cheese, shredded
  • Parmesan cheese, grated
  • 1 thawed and well drained (10 oz.) pkg. frozen spinach
  • 1 (16 oz.) Ricotta cheese

Directions

    Mix eggs, spinach, Ricotta cheese and spices together.

    Spray bottom of 9-inch square baking dish with Pam.

    Place 1 layer of lasagna noodles and spread with 1/2 of spinach mix.

    Pour a thin layer of sauce to cover.

    Sprinkle with 1/2 of Cheddar and Mozzarella cheeses and some Parmesan cheese.

    Repeat layers, cover with foil and bake at 350° for 30 minutes.

    Remove foil and bake an additional 15 minutes.

    Allow to cool 5 minutes before cutting and serving.
