  • 1 whole Egg Yolk
  • 2 Tablespoons Sherry Vinegar
  • 2 pieces Garlic
  • 1 teaspoon Dijon Mustard
  • 1 teaspoon Honey
  • 2 Tablespoons Finely Chopped Chives
  • 7 Tablespoons Olive Oil
  • Salt To Taste

Directions

    Finely mince 2 garlic cloves, sprinkle some kosher salt and smear against the back of a knife, so the garlic turns into a paste.

    Place egg yolk, mustard and vinegar in a bowl.

    Whisk together.

    Slowly drizzle in olive oil, whilst whisking constantly, and stir in garlic, chives, honey and salt.

    Chill.
