- 2 Tablespoons Sherry Vinegar
- 2 pieces Garlic
- 1 teaspoon Dijon Mustard
- 1 teaspoon Honey
- 2 Tablespoons Finely Chopped Chives
- 7 Tablespoons Olive Oil
- Salt To Taste

1Finely mince 2 garlic cloves, sprinkle some kosher salt and smear against the back of a knife, so the garlic turns into a paste.

2Place egg yolk, mustard and vinegar in a bowl.

3Whisk together.

4Slowly drizzle in olive oil, whilst whisking constantly, and stir in garlic, chives, honey and salt.
