Spinach Lasagna

  • 1 pkg. lasagna noodles
  • 1 pkg. frozen chopped spinach
  • 1 pkg. grated Mozzarella cheese
  • 1/4 c. Parmesan cheese
  • 1 large jar spaghetti sauce
  • 1/2 c. no-fat sour cream
  • 1 egg
  • 1 small carton cottage cheese
  • salt and pepper

    Cook and drain noodles; set aside.

    Cook and drain spinach; set aside.

    Mix cheeses, sour cream, egg, spinach, salt and pepper in a large bowl.

    Spread a thin layer of sauce in the bottom of a 9 x 13-inch pan.

    Layer noodles, cheeses, sauce to top of pan, ending with sauce.

    Sprinkle top with grated cheese and Parmesan cheese. Bake at 350° for 45 to 60 minutes until sides are bubbly and top is brown.
