Spinach Lasagna

Ingredients

  • 1 cup chopped onion
  • 2 cloves garlic
  • 1 pound ground beef
  • 1 Tbsp. olive oil
  • 2 one pound cans whole, peeled tomatoes
  • 2 6-oz. cans tomato paste
  • 2 Tbsp. sugar
  • 1 tsp. dried oregano
  • 1 tsp. dried basil
  • 2 eggs
  • 2 10-oz. pkg. frozen spinach
  • 1 pound carton cottage cheese, drained
  • 6 ribbons of lasagna
  • 12 oz. sliced Mozzarella cheese

Directions

    Saute first three ingredient in olive oil. Add next 5 ingredients. Simmer 35 minutes. Cook lasagna and set aside.

    Cook frozen spinach and drain very dry. Cool.

    Mix 2 beaten eggs, spinach and cottage cheese.

    Layer in baking dish:

    Sauce, 3 pieces lasagna and spinach mixture, then repeat. Top with sliced Mozzarella cheese. Bake at 375° for 30 minutes.
