Spinach Lasagne

  • 1 lb. small curd cottage cheese
  • 3 c. shredded Mozzarella
  • 1 egg
  • 2 (10 oz.) pkg. frozen spinach
  • 1 tsp. salt
  • 3/4 tsp. oregano
  • 1/8 tsp. pepper
  • 1 (30 oz.) jar spaghetti sauce
  • 1/2 pkg. lasagne noodles
  • 2/3 c. water and red wine mixture
  • 1 can mushrooms

Directions

    Preheat oven to 350°.

    Squeeze all water out of spinach.

    In large bowl, mix cottage cheese, 2 1/2 cups Mozzarella, egg, spinach, salt, oregano, pepper and mushrooms.

    In a 9 x 13 x 2-inch pan, layer 1/2 cup spaghetti sauce, 3 to 4 lasagne noodles, 1/2 cheese mixture.

    Again layer 3 to 4 noodles, 1/2 cup spaghetti sauce, 1/2 cheese mixture, 3 to 4 noodles and remaining spaghetti sauce.

    Top with 1/2 cup Mozzarella cheese.

    Pour water/wine mixture around edges.

    Cover lightly with foil.

    Bake 1 hour and 15 minutes.

    Cool 15 minutes before serving.
