Spinach Lasagne

- 1 lb. small curd cottage cheese
- 3 c. shredded Mozzarella
- 1 egg
- 2 (10 oz.) pkg. frozen spinach
- 1 tsp. salt
- 3/4 tsp. oregano
- 1/8 tsp. pepper
- 1 (30 oz.) jar spaghetti sauce
- 1/2 pkg. lasagne noodles
- 2/3 c. water and red wine mixture
- 1 can mushrooms
Directions

1Preheat oven to 350°.

2Squeeze all water out of spinach.

3In large bowl, mix cottage cheese, 2 1/2 cups Mozzarella, egg, spinach, salt, oregano, pepper and mushrooms.

4In a 9 x 13 x 2-inch pan, layer 1/2 cup spaghetti sauce, 3 to 4 lasagne noodles, 1/2 cheese mixture.

5Again layer 3 to 4 noodles, 1/2 cup spaghetti sauce, 1/2 cheese mixture, 3 to 4 noodles and remaining spaghetti sauce.

6Top with 1/2 cup Mozzarella cheese.

7Pour water/wine mixture around edges.

8Cover lightly with foil.

9Bake 1 hour and 15 minutes.

10Cool 15 minutes before serving.
