Ingredients
- 4 pkg. frozen chopped spinach
- 1 stick butter or margarine
- 4 Tbsp. flour
- 4 Tbsp. chopped onion
- 1 c. evaporated milk
- 1 c. vegetable liquor, drained from spinach
- 1 Tbsp. black pepper
- 2 tsp. celery salt
- 2 tsp. garlic salt
- 12 oz. roll jalapeno cheese
- 1 tsp. Tabasco or less to taste
Directions

1Cook spinach according to directions on package.

2Drain well and save liquor.

3Melt butter in saucepan over low heat.

4Add flour, stirring, until blended and smooth, but not brown.

5Add onion; cook slowly until soft.

6Add liquid slowly, stirring constantly to avoid lumps.

7Cook until smooth and thick.

8Add cheese (cut in small pieces) and seasonings.

9Stir until cheese melts.

10Combine with cooked spinach.

11Pour into 9 x 13-inch casserole dish sprayed with Pam.

12Top with buttered bread crumbs. Store in refrigerator overnight.

13Bake at 325° for 25 minutes or until bubbly.
