Spinach Mascarpone Dip

  • 1 small onion, minced
  • 2 T olive oil
  • 16 oz frozen chopped spinach, thawed and squeezed
  • 12 oz mascarpone cheese
  • 1/2 t. salt and pepper
  • 1/4 t cayenne
  • 1/2 c. grated parmesan plus some for topping
  • 1 loaf baguette, sliced and toasted

    saute onion in oil. add spinach and cook until hot. Add mascarpone and parmesan and stir. Pour into custard dish, top with additional parmesan and bake at 350 for 20-30 minutes until bubbling
