Spinach Mayonnaise

  • 1/4 pound spinach, tough stems and blemished leaves removed
  • Salt to taste if desired
  • 1 cup mayonnaise, preferably homemade
  • Lemon juice to taste

Directions

    Drop spinach into boiling water to cover with salt.

    Let cook about 1 minute and drain.

    Run under cold running water and press to extract excess liquid.

    Chop spinach as finely as possible or process it in a food processor or electric blender.

    Blend with mayonnaise.

    Add lemon juice.
