Spinach-Mushroom Soup

- 1 lg. onion. thinly sliced
- 1-1/2 lb. mushrooms, thinly sliced
- 1/4 cup white wine
- 1 qt. water,
- vegetable broth
- 3-1/2 oz. Enoki mushrooms
- 2 tbsp. soy sauce
- 4 cups spinach leaves washed
- Fresh ground pepper, to taste
Directions

1Place the onion and mushrooms in a large sacuepan with the wine.

2Cook slowly over low heat for about 10 minutes.

3Add the water or vegetables broth, the enoki mushrooms, and the soy sauce.

4Cook for an additional 10 minutes.

5Stir in the spinach and season with the pepper.

6Turn off the heat.

7Serve as soon as the spinach is wilted.
