Spinach Noodles

  • 2 c. flour or more if needed
  • 1/2 tsp. salt
  • 3 egg yolks
  • 1 c. cooked sieved spinach (fresh or frozen)
  • water (if needed)

Directions

    Knead together well. Divide dough into 4 parts and knead each part.

    Roll thin and place to dry slightly.
  3. 3
    Place layers on top of each other with a thin layer of flour between them.

    Cut as you would noodles, wide, not fine.

    Serve with tomato sauce and grated Parmesan and Romano cheeses.
