- 2 c. flour or more if needed
- 1/2 tsp. salt
- 3 egg yolks
- 1 c. cooked sieved spinach (fresh or frozen)
- water (if needed)
Directions

1Knead together well. Divide dough into 4 parts and knead each part.

2Roll thin and place to dry slightly.

3Place layers on top of each other with a thin layer of flour between them.

4Cut as you would noodles, wide, not fine.

5Serve with tomato sauce and grated Parmesan and Romano cheeses.
