- 4 lg. eggs, beaten
- Fresh spinach, washed and destemmed
- Mushrooms, sliced
- Yellow onion, diced
- Evaporated milk
- Shredded colby and Monterrey Jack cheese
- Sour cream
- Sea salt and pepper, to taste
Directions

1Saute mushrooms and onions until done.

2Add spinach to cook down, about 5 minutes, and set aside.

3Beat eggs with evaporated milk.

4Place in pan and cook eggs until bottom is done.

5Add all veggies and top with cheese, the flip one side of the eggs to cover the fillings.

6Cook about 3 minutes.

7Move to a plate topped with cheese and let the cheese melt.

8Divide into servings and top with sour cream.
