Spinach Omelette

Ingredients

  • 4 lg. eggs, beaten
  • Fresh spinach, washed and destemmed
  • Mushrooms, sliced
  • Yellow onion, diced
  • Evaporated milk
  • Shredded colby and Monterrey Jack cheese
  • Sour cream
  • Sea salt and pepper, to taste

Directions

    Saute mushrooms and onions until done.

    Add spinach to cook down, about 5 minutes, and set aside.

    Beat eggs with evaporated milk.
  4. 4
    Place in pan and cook eggs until bottom is done.
  5. 5
    Add all veggies and top with cheese, the flip one side of the eggs to cover the fillings.

    Cook about 3 minutes.

    Move to a plate topped with cheese and let the cheese melt.

    Divide into servings and top with sour cream.
