  • 1 pkg. frozen chopped spinach, thawed, drained and squeezed of all moisture
  • 1 medium yellow onion, chopped
  • 1 c. fine dry bread crumbs, (seasoned or plain, homemade or commercial)
  • 3 to 4 large eggs
  • 4 oz. shredded grated Swiss cheese (Cheddar or Gruyere also work well)
  • 4 Tbsp. Parmesan cheese, grated
  • seasonings (m.s.g., seasoned salt, pepper to taste)
  • herbs (parsley, basil, oregano, etc.) to taste
