  • 1 unbaked pie shell
  • 1 box unfrozen chopped spinach
  • 2 eggs, beaten
  • 3/4 c. Ricotta
  • 3/4 c. Parmesan cheese
  • salt and pepper to taste
  • 1 large onion, chopped and sauteed in 1 1/2 Tbsp. olive oil

Directions

  1. 1
    Mix all ingredients together and pour into unbaked pie shell. Place in 425° oven and bake for 45 minutes.
