- 2 pie crusts
- 1 pkg. frozen chopped spinach
- 3 eggs
- 1 lb. Ricotta
- 12 oz. Mozzarella
- 1 c. grated Parmigiana cheese
Directions

1Pinch holes in 1 pie crust and bake at 375° until light brown. Cook chopped spinach as directed on box, then drain.

2Beat 3 eggs and add to spinach.

3Drain Ricotta, then add 3/4 to spinach.

4Cut Mozzarella into cubes.

5Add 3/4 to spinach.

6Add grated cheese to mixture.

7Place mixture into baked pie crust.

8Top with thin layer of Ricotta and Mozzarella.

9Cover with second pie shell and pinch holes (with fork).

10Bake at 375° for 45 minutes or until brown.
