- 10 oz. chopped thawed spinach
- 1/2 c. minced onion
- 1 c. diced Swiss cheese, cut in 1/4-inch cubes
- 3/4 c. flour
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 2 Tbsp. cold unsalted butter, cut into bits
- 3 large eggs
- 1 1/2 c. milk
- 1/2 tsp. pepper
- 1/4 tsp. nutmeg
Directions

1In a bowl combine spinach, onion and Swiss cheese.

2Spread into bottom of deep ten-inch pie plate.

3In food processor blend flour, salt, butter and baking soda until a coarse meal.

4Add eggs, milk, pepper and nutmeg.

5Blend.

6Pour mixture over spinach.

7Bake at 400° for 40 to 45 minutes or until lightly browned and puffed.
