- 6 to 8 large potatoes
- 1 c. sour cream
- 1 tsp. sugar
- 1/2 c. margarine
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 tsp. minced onion
- 1 box frozen spinach
- 1 c. Cheddar cheese, shredded
Directions

1Peel, cook and mash potatoes.

2Add sour cream, sugar, margarine, salt, pepper and onion.

3Thaw spinach and drain well. Add to potato mixture.

4Place in 2 baking dishes.

5Sprinkle Cheddar over top.

6Bake, uncovered, 20 to 25 minutes at 400°.

7One dish can be frozen and baked later after thawing.
