- 1 (10 oz.) pkg. frozen chopped spinach
- 1/2 lb. Swiss cheese, diced
- 2 Tbsp. all-purpose flour
- 3 eggs, beaten
- 1 c. skim milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of ground nutmeg
- vegetable cooking spray
Directions

1Cook spinach according to package directions, omitting salt. Place on paper towels.

2Squeeze until barely moist.

3Set aside. Combine cheese and flour; set aside.

4Combine eggs, milk, salt, pepper and nutmeg.

5Stir in spinach and cheese until well blended. Pour mixture into a 9-inch deep dish pie plate, coated with cooking spray.

6Bake at 350° for 55 to 60 minutes.

7Let set 5 to 10 minutes before serving.
