Spinach Quiche

  • 2 Tbsp. unsalted butter
  • 2 (10 oz.) pkg. frozen, chopped spinach
  • 1/2 tsp. salt
  • fat pinch of nutmeg
  • 1 c. half and half
  • 1/2 c. grated Swiss/Monterey Jack cheese
  • 1/4 c. chopped onion
  • 1/4 tsp. white pepper
  • 4 eggs
  • 2 frozen 9-inch pie shells, thawed

Directions

    Melt butter in a large skillet.

    Saute onions over medium heat until soft, about 5 minutes.

    Add spinach and continue to cook, stirring often, until no liquid is left in skillet.

    Add salt, pepper and nutmeg.

    Stir well and allow to cool slightly, about 5 minutes.
