Sweet Ravioli

Ingredients

  • 125 g cream cheese spread
  • 14 cup caster sugar
  • 12 cup dried apricot, chopped
  • 2 sheets sweet puff pastry, thawed
  • oil (for frying)
  • caster sugar, extra, to serve

Directions

    Blend cream cheese & sugar together, fold in fruit.

    Cut 3cm rounds out of each pastry sheet, using a scone or cookie cutter.

    Place a small teaspoonful of the fruit mixture into the centre of 16 rounds.

    Brush edges with a little water, top with second round & press edges to seal.

    Heat oil & fry ravioli a few at atime, turning until crisp & golden.

    Drain on absorbent paper.

    Toss in extra sugar & serve with hot custard if desired.
