  • 6 eggs (1 yolk saved out to brush top of pie)
  • 10 to 16 oz. spinach chopped and wilted over onion
  • 1 lg. onion, chop and saute
  • 1 lb. sausage crumbled and cooked with onion
  • 1/2 c. ricotta cheese

Directions

    Mix onion/sausage/spinach into the eggs, 1/2 c. ricotta cheese and 3 c. to 4 c. of shredded cheese (half mozzarella and half cheddar).

    Bake 1 hour and 15 minutes at 350 degrees.
