Spinach Quiche

  • 9-inch pie crust, not baked
  • 1 c. shredded Swiss cheese
  • 1/3 c. onion, minced
  • 1 pkg. frozen spinach, defrosted and drained
  • 3 eggs
  • 2 c. heavy cream or half and half
  • 3/4 tsp. salt
  • 1/4 tsp. sugar

Directions

    Preheat oven to 425°.

    Sprinkle spinach, cheese and onion in pie shell.

    Beat eggs slightly and beat in remaining ingredients. Pour cream mixture in pie shell and stir gently.

    Bake 15 minutes. Reduce oven temperature to 300° and bake 30 minutes longer or until knife inserted 1-inch from edge comes out clean.

    Let stand 10 minutes before cutting.
