Spinach Quiche

Ingredients

  • 1/4 c. bacon bits
  • 6 oz. fresh mushrooms
  • 1/2 tsp. salt
  • 1/2 c. chopped green onions
  • 1/2 stick butter
  • 1 1/2 c. shredded sharp Cheddar cheese
  • 10 oz. frozen chopped spinach
  • 3/4 tsp. salt
  • 3 eggs
  • 1/2 c. sour cream
  • 1 c. milk
  • 1/4 tsp. salt
  • 1 partially baked 9-inch pie crust

Directions

    Sprinkle bottom of crust with bacon.

    Saute mushrooms, 1/2 teaspoon salt and onion in butter.

    Spread on top of bacon. Sprinkle grated cheese over mushrooms.

    Cook spinach according to directions with 3/4 teaspoon salt.

    Beat eggs and sour cream.

    Add milk, 1/4 teaspoon salt and spinach.

    Pour over cheese and bake at 350° until set.
