Spinach Quiche

  • 1/2 c. butter or margarine, melted
  • 10 eggs
  • 1/2 c. unsifted all-purpose flour
  • 1 tsp. salt
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed
  • 1 (8 oz.) can green chilies, seeded and chopped
  • 1 pt. (2 c.) fine curd cottage cheese
  • 1/2 lb. Cheddar cheese, shredded
  • 1/2 lb. Jack cheese, shredded

Directions

    Preheat oven to 400°.

    Place butter in a 13 x 9-inch pan in warm oven just to melt, about 3 minutes.

    Beat eggs in a large bowl.

    Mix in flour, baking powder and salt.

    Squeeze thawed spinach very dry and add to egg mixture, along with melted butter, chilies and cheeses.

    Pour mixture into pan and bake 15 minutes. Reduce heat to 350° and bake an additional 35 to 40 minutes.

    Let stand 5 minutes to set.

    Cut in 60 squares for hors d'oeuvres.
