- 1 (10 oz.) pkg. frozen chopped spinach
- 9-inch deep dish frozen pie shell
- 1 c. shredded Swiss cheese
- 1/8 tsp. pepper
- 1 (2 oz.) can sliced mushrooms, drained
- 5 eggs, well beaten
- 3/4 c. half and half or whipped cream
Directions

1Cook spinach according to package directions; drain, pressing out excess liquid.

2Set aside. Bake the pie shell for 5 minutes at 425°, then remove from oven and reduce heat to 350°.

3Stir together the spinach, cheese and mushrooms; pour into the pie shell.

4Blend beaten eggs, cream

5and pepper together.

6Pour over spinach mixture and bake at 350° for 45 to 50 minutes.

7Let stand at least 5 minutes before serving.
