Spinach Quiche

Ingredients
- 1 pie crust (frozen or homemade)
- 1 pt. Ricotta cheese (skim or whole)
- 1 c. sharp Cheddar cheese, grated
- 1 pkg. frozen spinach
- 1/2 c. flour
- 1/4 tsp. nutmeg
- 8 Tbsp. Parmesan or Romano cheese
- 1 to 2 eggs
Directions

1Thaw spinach just enough to make a ball.

2Squeeze until most all of juice is out.

3Mix spinach with Ricotta cheese.

4Add nutmeg and 1 egg (well beaten).

5Fold in 4 tablespoons of Parmesan cheese and 1/2 cup flour.

6Add Cheddar cheese and blend well.

7If mixture seems too dry, add another well beaten egg (I always do). Put mixture in pie shell (unbaked) and sprinkle remaining 4 tablespoons Parmesan cheese on top.

8Bake in 350° oven for 35 to 45 minutes, until brown on top (45 minutes if 2 eggs are used). Enjoy!
