- 1 (10 oz.) pkg. frozen spinach, chopped
- 1/2 lb. Swiss cheese, shredded
- 2 Tbsp. all-purpose flour
- 4 large or 5 small eggs
- 1 c. skim milk
- 1/2 tsp. salt
- 1/8 tsp. pepper
- dash of ground nutmeg
- vegetable cooking spray
Directions

1Cook spinach according to package directions, omitting salt. Place on paper towels and squeeze until barely moist. Set aside. Combine cheese and flour.

2Set aside.

3Combine eggs, milk, salt, pepper and nutmeg.

4Stir in spinach and cheese until well blended. Pour mixture into a 9-inch deep dish pie plate coated with cooking spray. Bake at 350° for 55 to 60 minutes or until set. Let stand 5 to 10 minutes before serving.
