Spinach Quiche

  • 1 (10 oz.) pkg. frozen spinach, chopped
  • 1/2 lb. Swiss cheese, shredded
  • 2 Tbsp. all-purpose flour
  • 4 large or 5 small eggs
  • 1 c. skim milk
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • dash of ground nutmeg
  • vegetable cooking spray

Directions

    Cook spinach according to package directions, omitting salt. Place on paper towels and squeeze until barely moist. Set aside. Combine cheese and flour.

    Set aside.

    Combine eggs, milk, salt, pepper and nutmeg.

    Stir in spinach and cheese until well blended. Pour mixture into a 9-inch deep dish pie plate coated with cooking spray. Bake at 350° for 55 to 60 minutes or until set. Let stand 5 to 10 minutes before serving.
