  • 1 frozen deep dish pie crust
  • 4 eggs
  • 1 pt. half and half
  • 1 pkg. frozen chopped spinach
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/8 tsp. nutmeg
  • 1 c. grated Swiss cheese

    Defrost the spinach.

    Squeeze out all excess water. Meanwhile, partially cook the pie crust (follow heating directions on package; about 10 minutes).

    Next, heat oven to 425°.

    In a large bowl, mix half and half, 4 beaten eggs, salt, pepper and nutmeg; mix.

    Spoon in spinach and combine.

    Sprinkle the cheese in the bottom of the partially cooked pie crust.

    Then pour mixture into shell.

    Place on a cookie sheet.

    Bake for 15 minutes at 425°, then lower heat to 350° and cook for 30 minutes or until knife comes out clean.l
